Ingredients

  • 3 onion, chopped
  • 1 tbsp cumin seeds
  • 1 tsp chilli flakes
  • 1/2 tbsp ginger/garlic paste
  • 1 packet Laziza Yakhni Pilau spice mix
  • 100g 0% Greek yogurt
  • 2 cubes Maggie seasoning (optional)
  • 3 chicken breasts, chopped
  • 2 cups rice, washed and soaked for 30 minutes

Method

Spray a large pan with plenty of low calorie cooking spray. Add the onions and fry for 5 minutes.

Add cumin seeds and chilli flakes and continue to cook the onions till golden brown (around 15 minutes). Use hot water if the onions start to stick to the bottom of the pan.

Add the chicken, ginger/garlic paste, Maggie cubes (if using, or use salt to taste) and one packet of the Laziza spice mix. Fry until the chicken has browned all over before adding the yogurt. Cook for 10 minutes then add 4 cups of boiling water to the chicken. Check for seasoning and add the drained water.

Cook the rice on high heat till most of the water has evaporated then place the lid on the pan and cook on a low heat for 25 minutes or until all the water has evaporated and the rice and chicken is cooked.

 

Chicken Fajitas

This is perfect if you have a fussy family like mine. My girls love this recipe as they get to add whatever they want in their wraps and always have fun trying to stuff it with as many fillings as they can! I use a Weight Watchers wrap for myself which is a healthy extra B choice or 5.5 syns each and use cheese as part of my healthy extra A choice. If you want to save syns, you can use iceberg lettuce leaves instead of wraps. I tend not to use sauces like ketchup or mayo, but if you do use them, remember to syn them accordingly.

Ingredients

  • 3 chicken breasts, cut into strips
  • 2 red onions, finely sliced
  • 1 green, 1 red and 1 yellow pepper, deseeded and finely sliced
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tbsp soy sauce
  • 1 tsp chilli flakes
  • Juice of 1 lime

Method

Spray a large wok with a free spray oil and place over a medium heat. Add the chicken and stir fry for 10-15 minutes until the chicken is mostly cooked.

Add the peppers and all the spices to coat the chicken spices and cook until the chicken is fully cooked.

Serve on a wrap with salad and cheese.

 

Chicken Tikka Pizza

A super easy cheat’s pizza ready in less than 20 minutes! This is syn free when using the wrap as healthy extra B choice and the cheese as part of healthy extra A choice. You can add any of your favourite Free Food toppings, I’ve used Haloodies Chicken Tikka slices for this pizza as they are pre-cooked already making this even easier! You can find the syn values for Haloodies products here. The chicken tikka is available in most supermarkets in the halal chilled food section.

I cut these into slices of 8 making it perfect for tasters sessions for Slimming World groups or any other party.

You can get the pizza seasoning from Aldi, I’ve recently picked it up from my local Aldi for a bargain 29p!!! If you can’t find the pizza seasoning then you can use mixed herbs instead as it works quite well too.

I know cottage cheese may sound weird on a pizza but believe me it does not taste like it once cooked. The cottage cheese gives the pizza a lovely effect, it looks like mozarella cheese once cooked!

Ingredients

  • 1 Weight Watchers white wrap
  • 20g light cheddar cheese
  • Tomato puree
  • Pizza seasoning or mixed herbs
  • Mushrooms
  • Haloodies chicken tikka slices
  • Cottage cheese
  • Spinach
  • Cherry tomatoes

Method

Spread tomato puree all over the wrap and sprinkle some of the pizza seasoning. Add all of your favourite toppings and a dollop some of the cottage cheese around the pizza before sprinkling the cheddar cheese on.

Bake in a pre heated oven on gas mark 6 for around 12-15 minutes till the cheese is melted and golden.

  • 3 eggs
  • 3 slices of Najma Wafer thin Turkey slices
  • Salt and pepper

Method

Pop each turkey slice into a muffin tin and crack an egg into each one.

Pop them in a pre heated oven for about 15 minutes or longer if you prefer a fully cooked yolk. Once cooked season with salt and pepper.

Hartley’s 10 Cal Jelly Pots

Who knew that a simple jelly pot could lead to many debates on my social media platforms!

Many slimmers may have recently come across the Hartley’s 10 cal jelly pots. I’ve been having them for a few years now since I was a SW member.

I didn’t think that posting a picture of it recently would cause such a stir with so many people doubting the jelly was suitable for vegetarians as the pot does not have a ‘suitable for vegetarians’ label which is fair enough, but I always check food labels before buying them! I check for two things:

  1. Ingredients
  2. Syns

I would not knowingly eat and post/share food that I would not be allowed to eat in my halal diet. I hope this post will help those that may need more clarification. I have included below a response from an email from Hartley’s. If in doubt please do your own research and contact them yourself.

Most of our jellies are not suitable for vegetarians. Our tablet and powdered jellies, designed to be made at home, contain gelatine. Some of our Ready to Eat jellies contain the colouring Carmine, which is an animal product.

Chicken & Noodle Soup

I love making this soup when I have leftover chicken to use up from a roast dinner. It is so easy to make and super delicious. If you can’t find celery salt you can use chopped celery (2 or 3 sticks are enough) but I didn’t have any celery today! I haven’t specified the amount of chicken and noodles used as it varies. If I have a lot of leftover chicken, I use half a pack of the noodles pictured (Blue Dragon noodles from Asda). If I don’t have much chicken then I will use a whole pack of the dried noodles.

Ingredients

  • 3 medium carrots, peeled and diced
  • 3 medium onions, finely chopped
  • 2 tbsp dried parsley
  • 1 tsp chilli flakes
  • 1 tsp celery salt
  • 2 chicken stock cubes
  • Cooked chicken, shredded
  • Dried noodles
  • Low calorie cooking spray

Chicken & Noodle Soup

Method

In a large pan, spray low calorie spray and add the carrots, onions, parsley, chilli flakes and celery salt. Cook on a medium heat for about 10 minutes till the veg are soft. If you find the veggies are sticking to the pan, you can add boiling water to stop that.

Add the chicken, chicken stock cubes and enough water to cover the chicken. Cook for about 5 minutes.

Add the dried noodles and more water if you need it (depends on how you like your soup, I usually start off by adding 1 litre and add more if needed). Cook for a further 5 minutes till the noodles are done.

 

Mince Tarts

I have to admit I have never been a fan of mince pies until I made these little tarts – they are so delicious! A lot of my members love these whenever I make them for group tasters. I like to use Asda’s own make of mincemeat!

Time Taken: 25 minutes, plus chilling and baking

Mince Tarts

Ingredients
For the pastry:

  • 225g plain flour
  • pinch of salt
  • 110g margarine or butter
  • Cold water, for mixing

For the filling:

  • 16 level tbsp mincemeat
  • level tbsp icing sugar for dusting (optional, I usually skip it)

Method

Preheat the oven to 190°C/170°C Fan/Gas Mark 5. Lightly spray some bun trays with low calorie cooking spray.

Make the pastry. Sift the flour and salt into a mixing bowl. Add the fat, cut up into little pieces. Gently rub it in with your fingertips. Add sufficient cold water to mix to a ball that leaves the sides of the bowl clean. Rest in the refrigerator for 30 minutes.
Roll out the pastry thinly on a lightly floured surface. Cut out 32 rounds with a 7½cm fluted cutter. Use to line the prepared bun tins.

Divide the mincemeat between the pastry cases. Roll out the remaining pastry trimmings and make some little stars with a small star cutter. Use to decorate the tops of the tarts.

Bake in the preheated oven for about 15 minutes, until the pastry is crisp and lightly coloured. Cool on a wire rack and dust lightly with sifted icing sugar if using.
